Taste: Dulles Town Center’s food court is a loud mish-mash of squawking children and fast-food restaurants but somewhere between the gloopy steak subs and tragic-looking tacos is a shining spot for fast-casual Indian cuisine. Chopathi India Kitchen’s bowls are works of art that tote a similar quality to Chipotle’s but with a kick of masala. Paired with vegetable samosas and a mango lassi, a quick bite in-between department stores turned into an occasion to slow down and savor every flavor. Because the toppings are customizable, it was tempting to pile all the options on (which I most definitely did): jeera rice, lettuce, tomatoes, cucumbers, chickpeas, paneer, cilantro, onions, corn, a wedge of lemon, sauteed vegetables and a creamy butter-based Malai sauce combined for a fresh, cleansing meal. With spoon in hand, I scraped the bowl clean—and felt energized, not comatose.
